Election Night! What's for dinner?

It must be something quick so we can sit around the TV and watch the election returns. We have opted out of the Lobster Bisque Choice...and champagne.

My son, Ben, Le Chef,is doing the honor of serving his own version of
Chicken Fajitas wrapped in homemade flour tortillas.

A good dose of Pinto Beans...good for the heart, I am told.

*Potato Salad ala Grace

Avocado slices, Diced Tomatoes, Onions, cilantro and serranos.
Of course, a little dab of sour cream if you wish.

For drinks, we have some juices for the little ones. Sodas, Fosters, Guiness for the bigger kids and Chardonnay for the real adults, since I am the only wine drinker and that is my choice of wines.

Our wonderful potato salad is a family tradition, handed down from my MIL, Grace Wilcox...mother of my 2nd X husband and grandmother to my 3 younger children.
Quickly, the recipe is:
5 Large Irish Potatoes or 10-12 New Potatoes
2 bunches of garden onions
Several sticks of Celery,
Cilantro
Vinegar
Oil
2 packets Good Seasons Italian Salad Dressing Mix.
Mayonnaise
Hearty Appetite

After Boiling Potatoes until done...you know what "done" means, don't you?
Peel the skin off and cut the potatoes into chunks.
Sprinkle with Vinegar of choice(I like white, but then I tend to be a bit weird on some things), then a small dose of Vegetable oil.
Sprinkle chopped cilantro and 2 packets of Good Seasons Italian Salad Dressing Mix

Refigerate for about an hour.
Fold in about a half cup of Mayonnaise.
Stir it all together and let it set for an hour or so...then eat.
Delicious!
